Jaeger-Defaix is the family Domaine of Hélène Defaix, the wife of Didier Defaix, the famed Chablis producer of Domaine Bernard Defaix. Most of the Jaeger-Defaix vineyards are actually of the Premier Cru designations and brilliantly situated within the appellations best sites. On top of that, given the family connection, it's not surprise that the estate is run in the same ethos and spirit as Didier’s family Estate in Chablis where their vineyards are all managed with sustainable and organic practices.
The long family connection to the land here is strong, dating back three generations, with the great-grandfather of Hélène, Henri Niepce, instrumental in achieving and promoting Rully's AOC status in early the 1930s.

The first vintage under Hélène & Didier’s full control was 2004 and since then they’ve built a strong reputation for cool and refreshingly elegant Chardonnay and sweetly scented Pinot Noirs. Utilising debudding techniques to control yields in order to produce a concentrated, fine and expressive wine.

Tasting Note:

Beautiful bright ruby-red colour. Aromas of raspberry, red currant and blackberry. Pretty and refined on the nose. On the palate there is an abundance of red fruit and a touch of spice. The tannin structure is silky creating an elegant Pinot Noir that is supple and fresh.

This is a Dry, Medium bodied wine with High acidity and Medium tannin. It is Medium+ in it's intensity with Medium alcohol and a Medium finish.
