3 guys, 1 Goal: Onannon & a high quality passion project

This joint venture was founded by Will Byron, Kaspar Hermann and Sam Middleton, each of whom contributed the last letters of their surname to make Onannon. The trio initially met whilst working at Coldstream Hills many years ago. Will is now the chief winemaker at Stonier in Mornington Peninsula, Kasper at Toolangi, and Sam has taken over winemaking duties at his iconic family estate, Mount Mary in the Yarra Valley where he and Kaspar have worked for years.

With Onannon, they are looking to make wines that excite them from Mornington Peninsula and Geelong, focusing primarily on Pinot Noir and Chardonnay. With strong relationships with great growers, this is more than just a hobby, Onannon is a high quality passion project.

The Onannon Mornington Peninsula Pinot Noir is grown on three vineyards: Onannon’s original Red Hill site (23-year-old vines), a site in Shoreham (20-year-old vines) and another in Balnarring.

Tasting Note:
This wine is made with 50% whole bunches and no oak used throughout the process to maintain purity and translucency. The fruit really sits in the front seat with plenty of blue fruits moving into black fruits, with some cardamom/star anise spice notes from the bunches. The palate is led primarily by darker fruits that at the moment seem to swallow the bunch spices. There is plenty of brightness here and the wine finishes with sour cherry and fine velvety tannins.
